Yummy Healthy Chicken Pizza

Have you ever avoided making a homemade pizza because you thought it would take hours to make? Well, I have a pizza recipe for you that fits perfectly with your healthy diet plans and the prep time for this delicious homemade pizza is only 20 minutes and then cook time is 15 minutes. This homemade pizza should be a part of your healthy eating plans. It tastes delicious and only takes about 35 minutes to make and serve. Recipe by registered dietician Jayson Hunter.

Ingredients:

1 12 ounce whole-wheat or whole-grain pizza crust, such as Boboli

1/4 cup pizza sauce

1/2 cup frozen spinach, thawed and drained well

1/4 small red onion, thinly sliced

1 cup shredded part skim mozzarella cheese

6 medium white mushrooms, sliced

1/4 cup part skim ricotta

2 Tbsp grated Parmesan

1 Tbsp Extra Virgin olive oil

2 tsps Balsamic Vinegar

6 oz of chopped chicken, cooked

 1. Cook 6 oz of chicken and then cut into small chunks.

2. Preheat the oven to 450 degrees. Place a large pizza pan or baking sheet on the bottom of the oven to preheat.

3. Spread the pizza sauce on the pizza crust followed by the spinach and onion. Then sprinkle with the mozzarella and mushrooms. Dollop the ricotta over the pizza and sprinkle wiht the parmesan. Spread the chopped chicken over the pizza and finish by drizzling the olive oil all over.

4. Carefully transfer the pizza to the preheated pizza pan or baking sheet that is in the oven. Bake until the crust is puffed and beginning to color at the edges and the cheese is melted. This should take about 10 minutes. Take the pizza out of the oven and then preheat the broiler.

5. Put the pizza back into the oven once the broiler is up to temperature and broil the pizza until the cheese is browned and bubbling. This will only take about 2-3 minutes. Pull the pizza out and let cool for 5 minutes. Sprinkle with the balsamic vinegar and slice and serve.

Shredded Parmesan Cheese

This is one of my favorite ways to prepare asparagus. It’s hard to believe, but it is my kid’s favorite side dish! It’s unthinkable, but I hear these words come out of their mouths often,

“Yes! Mom is making asparagus..That’s my favorite!”

Have it as a healthy snack or as a yummy side dish to your main course.

I thought I would post an easy, healthy snack that even your children can enjoy. My kids got a kick out of this picture and they can’t wait to try it.

It’s been a while since I posted a new blog post here at Fat Loss By Eating What You Want. I’ve been busy writing an ebook for my main business. If you know any mortgage or real estate professionals that want to build their business in 2010, refer them to my ebook.

Eat healthy as we close out 2009 as I’ve been trying to limit my intake of Belgian chocolates, Root Beer floats, Red Velvet Cake and Buttermilk Cinnamon Streusel Cake! These are all gifts from my neighbors. Now I understand why it’s soo easy to gain so many pounds during the holidays!

I was really surprised to see this added to their menu. I was even more surprised at how much I really liked this wrap.

The asian dipping sauce that comes with it tastes really great as well.

I have a recipe for Sante Fe Grilled Chicken Wraps but I love this picture and the actual wrap so much that I decided to add it to this post.

Santa Fe Grilled Chicken Wraps

1 Pkg Grilled Chicken Breast Strips
1 large tomato, chopped
4 cups of chopped romaine lettuce
1 can whole kernel corn, drained
1/2 cup Mexican Style shredded cheese
1/4 cup Salsa
Whole Wheat Tortillas

Toss romaine lettuce, chicken breast strips, tomatoes and corn in large mixing bowl. Sprinkle with cheese. Combine dressing and salsa. Pour over romaine mixture; toss to coat. Spoon onto tortillas and roll.

High Protein Apple Cinnamon Pancakes

¾ cup Quaker quick Oats or instant oats
4 egg whites
½ cup apple, diced
1 scoop of Protein Powder
1 tsp. Of cinnamon

Directions

1.) Put all ingredients together in a mixing bowl. Stir until the mixture has a semi-liquid pancake-batter-like consistency.

2.) Spray some non-stick spray on a frying pan and pour the mixture into the pan.

3.) Cook on medium heat. When one side is lightly browned and solid enough to flip, turn the pancake over with a spatula and cook the other side until lightly browned and firm.

Notes: For higher protein diets, add one scoop of vanilla protein powder (”Designer Protein” brand “vanilla praline” adds a nice flavor too). Wrap up your pancake in foil and take it to go, put it in the fridge for later use, or eat it hot! Oatmeal pancakes will stay fresh all day long without refrigeration.
