Lemon Chicken
Protein: 4 chicken breast halves
Produce: None
1/2 cup fresh lemon juice
1/2 cup fresh orange juice
2 cloves garlic, minced
1 T grated fresh ginger
1 T chopped fresh tarragon
1/2 teaspoon salt
1/4 teaspoon freshly ground pepper
How To:
1. In a small bowl, stir together lemon juice, orange juice, garlic, ginger, tarragon,
salt and pepper to make lemon sauce.
2. In a 10-inch non stick skillet lightly coated with cooking spray, cook chicken over
medium-high heat for about 15 minutes or until juices are no longer pink when
thickest part of chicken is cut.
3. Spoon some lemon sauce over chicken, turn chicken over and cook for an
additional 15-20 seconds. Serve chicken topped with remainder of sauce.
