Grilled Chili Lime Chicken

Grilled Chili Lime Chicken

Chicken Tenderloins
Lime Juice
Chili Powder
Cumin
Fresh Cilantro – chopped

Combine all ingredients mix in with chicken mix to turn and coat the chicken well. Cover, refrigerate and marinate for about 3 hours.

Grill few minutes each side – will cook quickly as lime juice helps pre-cook the chicken. Serve with side of mango salsa and whole grain sesame chips.

Mango Salsa

Ripe mango – diced
Red onion – chopped
A Jalapeño chile- minced
Cucumber- peeled and diced
Fresh Cilantro – chopped
Fresh lime juice
Salt and pepper to taste

Combine everything in a bowl. Season with salt and pepper. Add diced avocado if you like a more mild taste. Serve with a side of whole grain sesame tortilla chips.

Roasted Red Bell Peppers

Cut pepper into chunks, string onto a skewer between some red onions, drizzle with olive oil and top with fresh cracked pepper and sea salt. YUM! These are great right off the grill and so super yummy as leftovers to add to a salad or on a sandwich.
